Grams, Ounces, Pounds and Kilograms: Kitchen Weight Conversions

A digital kitchen scale holding a bowl of flour, surrounded by butter, sugar and eggs on a marble counter.

To convert grams to pounds, divide by 453.59237; to convert ounces to pounds, divide by 16. NIST defines the pound as exactly 453.59237 grams, so one ounce (1/16 lb) is exactly 28.349523125 grams, or 28.35 g in the kitchen. One kilogram equals 2.2046 pounds, or 35.27 ounces.

Key facts

  • 1 pound (lb) = 16 ounces (oz) = 453.59237 grams, exactly (NIST Handbook 44).
  • 1 ounce = 28.349523125 grams, exactly (1/16 of the exact pound); kitchens round to 28.35 g.
  • 1 kilogram (kg) = 1,000 g = 2.2046 lb = 35.274 oz.
  • Weight ounces measure mass; fluid ounces measure volume. NIST puts 1 US fl oz at 29.57 mL.
  • King Arthur Baking weighs a cup of all-purpose flour at 120 g, but a packed cup can hold up to 160 g.

Kitchen weight conversion factors

Every US–metric weight conversion comes from one number: the pound is defined as exactly 453.59237 grams, the value NIST Handbook 44 marks as exact. Everything else follows by arithmetic. The figures below were calculated from that definition and rounded only at the end.

How to read "1.5 lb" as pounds and ounces

A decimal pound is not pounds and ounces: 1.5 lb means one and a half pounds, which is 1 lb 8 oz, not 1 lb 5 oz. To convert, keep the whole number as pounds and multiply the decimal part by 16 to get ounces.

  • 1.5 lb: 0.5 × 16 = 8, so 1 lb 8 oz.
  • 1.25 lb: 0.25 × 16 = 4, so 1 lb 4 oz.
  • 0.75 lb: 0.75 × 16 = 12, so 12 oz.
  • 2.2 lb: 0.2 × 16 = 3.2, so 2 lb 3.2 oz.

This matters most with meat and cheese labels, which give decimal pounds, and with recipes that list ounces.

Weight ounces vs fluid ounces

An ounce on a scale and a fluid ounce in a measuring cup measure different things. The weight ounce (28.35 g) is mass; the fluid ounce is volume, about 29.57 mL per NIST. They line up only for liquids about as dense as water: 1 fl oz of water weighs about 29.6 g, or 1.04 oz.

For anything else, a cup's weight depends on the ingredient. A cup (8 fl oz) of all-purpose flour weighs 120 g, or about 4 1/4 oz, per King Arthur Baking, roughly half the weight of a cup of water. So "fl oz to grams" has no single answer; look up the ingredient on our cups to grams pages, such as all-purpose flour. For volume units, see our liquid measurements chart and ounces in a cup.

Why do bakers weigh ingredients?

Bakers weigh because a cup of a dry ingredient varies with how it's filled, and a gram doesn't. King Arthur Baking found that a cup of all-purpose flour filled by fluffing, spooning and leveling holds about 120 g, while a packed cup can hold up to 160 g, a third more flour. Weighing gives the amount the recipe writer intended, and King Arthur says being within about 5 g of the stated amount won't affect most recipes.

Grams also make scaling easy: halving 240 g is simpler than halving 1 3/4 cups. If you don't have a scale, our guide to how to measure flour covers the spoon-and-level method.
